Some Things You Just Gotta Have!
Back in the 1970's, in Salt Lake City, there was a restaurant called “The Godfather," and they served a fantastic Caesar Salad. It was made at your table with all of the ingredients on a cart and you salivated while the chef mixed it in front of you. It had all of the good stuff: fresh romaine lettuce, olive oil, garlic, anchovies, a big lemon, egg, garlic-cheese croutons that were made in-house, and grated parmesan. Of course, everything was pre-measured...he just tossed it all together and served.
I moved to Alaska in the mid 70's and a few years later on a visit to Salt Lake, I rushed out to enjoy a fresh Caesars Salad at my favorite haunt - but unbelievably, they had closed! I was devastated.
Later back in Alaska, I decided to try and duplicate the Godfather recipe and went shopping for all of the ingredients I remembered. After all I must have watched them make the salad at least a 100 times.
Dinner that night consisted solely of the salad. Let me say that it was not very good. In fact, it was terrible. Those of you who know me could predict what I would do. The next morning I bought three heads of romaine (1 head per salad) and planned to have salad for breakfast, lunch and dinner until I got it right. Three days later, nine straight meals of revised Caesar Salad attempts, it finally tasted right to me. I created my own recipe! No big deal in the real world, but to me it was a major accomplishment.
But guess what? This isn't about Caesar Salad...it is about one of the key ingredients you must have...fresh, American-style yellow lemons.
The Costa Rican markets do not sell this type of lemons because they have their own "limon acido,” which is a sour, orange-fleshed citrus that makes fantastic lemonade, but very different tasting Caesar Salads. The trees grow here, but the Costa Ricans prefer their native "lemons.”
We were fortunate. Our property had several small citrus trees that when mature, produced perfect American style, yellow lemons. So the point of this blog is if you are living here or plan to move to CR and you just gotta have these guys...call us and we'll see what we can do.
